here is a turkey tip I just got..

TURKEY TIP
Put the turkey in the pan upside down, in other words, white meat down.
Turn right side up for the last few minutes of roasting to brown the top, or use the broiler for a few moments for a quick fix.
This will help your white meat to stay good and moist.
