Hidden Surprises
(Inside each buttery almond cookies is a chocolate treasure.)
1/2 C butter (no substitutes!),
1/4 C butter-flavored shortening,
1 C sugar,
1/2 t baking powder,
1/2 t salt,
1 egg,
2 egg yolks,
2 t vanilla,
2 1/2 C flour,
1/3 C sifted powdered sugar,
2 T unsweetened cocoa powder,
1 T melted butter,
1/4 t almond extract,
Coarse colored sugar or candy sprinkles.
Beat butter and shortening with an electric mixer on med. to high speed
for 30seconds.
Add sugar, baking powder, and salt; beat till combined.
Beat in egg, egg yolks, and vanilla till combined.
Beat in as much flour as you can with the mixer; stir in any remaining
flour with a woodedn spoon.
Transfer 3/4 C of the dough to a samll bowl.
Add powdered sugar, cocoa powder, and melted butter.
Beat well. Shape into 1-inch balls.
Beat almond extract into remaining dough.
Mold about 1 T of the almond-flavor dough around each cocoa ball Roll
gently to make smooth, round ball.
Roll each ball in colored sugar or candy sprinkles.
Place balls 2 inches apart on greased cookie sheets.
Bake in a 375º oven for 10 to 11 minutes or till bottomos are
lightly browned. Cool cookies on pan for 1 minute;
transfer to wire racks. Cool completely. Makes about 30.
