For the "core" of the volcano, you'll need a small babyfood=type jar.
Use a small plywood sheet painted however you'd like to simulate the ground, and glue the jar to the plywood.
Don't use any base that won't take a good soaking.
A "border" around it to contain the lava would be nice, or place in a large cookie sheet.
Now you form the volcano around the jar, but only just a LITTLE over the edge of the jar.
You can form a shape from cardboard and tape it to the base and cover it all with paper-mache
(use wallpaper paste and newspaper:easy!), making the top layer bumpy with "ruts" for the "lava" to flow down.
You can also cover with modelling clay if you can find something inexpensive, or just use it as the top layer.
Cover any taped edges around the base of the volcano with this also.
To make the actual volcanic action, put about 2tbsp of baking soda in the bottom of the jar.
When ready, fill the jar almost full with vinegar (you may add a little red food colouring), pouring quickly and all at once.
Let foam!
I'd try this in the sink first without the volcano to find the right combination of baking soda/vinegar for the size of jar
you are using. Then you will be certain your volcano will work properly.
