sugar crystals

what I gather is they are just simple rock candies. Do you heat your water to 250 degrees,and
you don't stir after you've dissolved the sugar do you?
If you are using skewers, you pour the liquid in a jar,punch the skewer through a plastic coffee-can lid.
Lay the lid over the jar so the skewer hands down the middle of the liquid but do not
let the skewer touch the bottom of the jar.
Some people moisten the skewer very lightly and roll in a bit of sugar (this
will attract the sugar crystals from the syrup).
And others do the following after getting the sugar to dissolve (they start with 2 cups) they heat the sugar-water solution a second time and dissolve as much additional sugar as you can get
into it (this for the biggest crystals fast).
Add a few drops of food coloring to the solution if you want.
